Ingredients
- 1 lb ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 28-oz can crushed tomatoes
- 1 15-oz can kidney beans, rinsed
- 1 cup beef or veggie stock
- Salt, pepper, lime wedges
Steps

Brown meat with onion, garlic, and pepper in a heavy pot until the veggies soften.

Stir in spices and toast for 1 minute to bloom.

Add tomatoes, beans, and stock; simmer uncovered 20–25 minutes until thick.

Season to taste and serve with lime, scallions, and crunchy toppings.
