Ingredients

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 tbsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 28-oz can crushed tomatoes
  • 1 15-oz can kidney beans, rinsed
  • 1 cup beef or veggie stock
  • Salt, pepper, lime wedges

Steps

  1. Brown meat with onion, garlic, and pepper in a heavy pot until the veggies soften.

  2. Stir in spices and toast for 1 minute to bloom.

  3. Add tomatoes, beans, and stock; simmer uncovered 20–25 minutes until thick.

  4. Season to taste and serve with lime, scallions, and crunchy toppings.
